Abstract

This study aims to determine the yield of collagen from the skin of milkfish (Chanos chanos) extracted with acetic acid. The method used in this study is an experimental method with several levels of treatment: acetic acid concentrations of 0.3 M, 0.5 M, and 0.7 M, with 3 replications. Analysis of the yield data using descriptive quantitative. The results of the analysis of the yield of 0.3M 0.5M and 0.7 M concentrations yielded 1.27%, 1.56 and 1.84% yields. The results of the analysis of the milkfish skin collagen yield data showed that the treatment using acetic acid to produce collagen was close to the standard. SNI collagen is treatment C (acetic acid concentration 0.7 M) which is 1.84%.
